In starch, all the glucose repeat units are oriented in the same direction. But in cellulose, each successive glucose unit is rotated 180 degrees around the axis of the polymer backbone chain, relative to the last repeat unit. Cellulose contains beta linkage and enzymes cannot act upon this linkage, thus maintains the structural integrity, whereas Starch contains alpha acetal linkage. Enzyme can act upon this linkage to produce amulose and amylopectin thereby releasing glucose, source of energy. c. Alpha-glycosidic bond and beta-glycosidic bondd.
