Everyone in Saudi Arabia or gulf countries has his own way to make Kabsa. Every way to make this dish is a little bit different in terms of color or taste. I would like to tell you about the recipe by my lovely mother and I am pretty sure that you will love it. You can use pressure cooker to make it faster, but it is not necessary. All you need are margarine, onions, chicken, tomatoes, dry lemon, cardamom, cinnamon, cloves, bay leaf and black pepper, Kabsa spice and sometimes I use curcuma. You can find that in any Middle Eastern store and there are two places here in Pocatello. It takes about 60 minutes to cook. Oil is placed in a bowl with the chopped onion and stirred until it melts and wilts. Then put breast chicken on the top of the onions and toss until it changes color. After that add tomato sauce with tomato and add the ground spices. Now you can put chili and dry lemon. Cover the pot and leave it to simmer about 40 minutes until chicken is cooked. Then take out the chicken out of the pot after the maturity and put quinoa then. Add a little of chicken broth which was in the pot. Leave it till 60 minute and take a look: if there is no water left it is ready to serve. Finally, put Kabsa in a serving dish and the leader of the onions on the reddish surface.
