The results showed that there is a significant relationship between the number of days the bread took before and after expiry and brand type, bread size, bread type, the location where the bread was bought from, and exposure to sunlight. The results imply that apart from the conceived factor of keeping bread for long, there are other factors that affect the rate at which bread mold develops. The results will be used by medical practitioners, purchasers, and consumers to ensure that they understand the concept that there are other external factors that impact the rate at which molds develop on bread.

  • INTRODUCTION.

There has been great debate on whether there are other factors behind the stalling of Lebanese bread apart from its components and manufacturing process. Manufacturing the bread in poor condition and storing it in warm areas accelerates contamination by mold which affects the bread life. Bread storage impacts its life as bread stored in shelves could get moldy faster than the bread stored under the freezer which never molds. Bread stored during summer could have a low life span as opposed to those stored during winter. What has remained unclear is the facts related to bread type whether white or wholemeal bread has a different life span and whether expensive pieces of bread have long-lasting life than cheap pieces of bread.

The study was conducted to determine the different bread life span in regard to its expiry date and the period the bread takes to develop mold.

  • AIM.

After it was decided that the group had to conduct the project using different pieces of bread several discussions as well as consideration with regard to where the data should be placed as some samples were anticipated to be placed on direct sunlight while others were to be kept indoor not to be exposed to direct sunlight., location at which pieces of bread were to be bought and bread-type with an aim of obtaining two hundred and fifty observations; though the study was restricted due to work, university rules.
