Peppercorn Dining Purpose of the case This case strived to analyze the organizational development and change of Peppercorn Dining. The researcher will collect data from peppercorn dining, a restaurant, which was initially meant for students but was later changed. Research design Through a consultant, the study adopted descriptive survey as a method of collecting information by using a standardized form of interview schedule and administering a questionnaire to a sample of individuals. This method is most appropriate for collecting information to analyze the organizational development and change of Peppercorn Dining. The study used both qualitative and quantitative approaches. This was appropriate variable in collecting and summarizing data that was used in analyzing about to analyze the organizational development and change of Peppercorn Dining and some mitigation measures necessary. As a result, the qualitative and quantitative research methods ensured reliability and credibility of the results. The design is also suitable because it gives an in-depth description of the phenomena in their existing setting. This fits well with the hotel staff who participated in the study while in their respective duties. Descriptive survey was also preferred because it is economical in collecting data from over a large sample with high data turn over. Data collection process Mark Tap consultants were assigned the duty of collecting the data in order to improve on how Peppercorn Dinning operates concerning their development and change. In their quest to obtain the needed data, the consultants will issue questionnaires to staff members and managers. Sample Selection The selection will be based on randomization principle, which is a procedure of giving every subject in a population an equal chance of appearing in the selection. Stratified random sampling will be used to select the sample population. After which, simple random sampling will be used to get the required the desired sample. Data analysis Data Analysis procedure The data collected was analyzed using both descriptive and inferential statistics. Open coding was used to initially name and categorize the data, and selective coding was used to develop a more general framework. The study used frequency count, mean, standard deviation, minimum and maximum values of variables. The hypotheses formulated for the study tested using logistic regression. Quantitative data analysis was done to generate frequencies percentages and means. The resulting quantitative data will then be interpreted using simple statistical method. The questionnaires were analyzed using Statistical Package for Social Sciences (SPSS) version 21. The data collected through questionnaire was classified on the basis of common attributes then tallied to obtain statistical frequencies, tabulated and finally analyzed using descriptive statistics. This helped to collapse large volume of quantitative data in numerical form for ease of statistical interpretation. Besides this, the ANOVA test was applied to find the significance difference among the opinions of different categories of the respondents. The qualitative data obtained through open-ended questions and interview protocols was analyzed by placing the responses into identical categories as described in NVivo software used for analyzing qualitative research data. Besides frequencies, the opinions of the respondents will be calculated into percentage. Interviews and observation Peppercorn Dinning has not embraced professionalism, in that anyone is assign to do a given chore on the basis of who comes first. It is disappointing to note that those who merit to be in finance, marketing and technological sections are thrown away to manual work such as cooking and cleaning. This was triggered by the fact that the students were allowed to seek for employment in Peppercorn Dinning with their academic qualifications notwithstanding. The academic qualification of the organization had not attained the proper skills the hire or fire workers. The poorly motivated workers have brought about poor service delivery thus reducing the number of customers attending the Dinning. Food products that were being offered are fixed in that customers are not given a chance to propose their needs. Customers wanted to have a role to play in the organization but their chances were all closed. Technologically, Peppercorn Dinning have introduced technology to assist them is making payments. During a busy day, customers are not crowded in queuing sections in that the system has improved on the rate of customer payment per minute. In addition, there is less movement in the service area because additional workers are reserved for times when it gets busy. Peppercorn Dinning are more concerned with their workers and customers. In a case where an employee feels sick, a new employee is given a job temporarily. Initially, students were fully in judge of entire operations, later new policies were passed that burred student from working, this changed everything. Since then, tension has existed between employees and students for the reason than their jobs were taken. Months after students were allowed to supervise operations. Tension still exist especially on age, economic and experience between students and personnel. On interviewing the cashier who was a woman, she told the researcher that her job was not shared with any other person for accountability reasons. She adds that although students are not friendly on her, she has managed to improve her relationship with the management. The design of service and cash room is not in a proper manner. Cashier’s room is placed right after the entrance. During winter season, it is very cold for her any may suffer health problems afterwards. The kitchen and Dining rooms are near to one another hence smoke could maneuver to all the rooms destructing the customers’ comfort. The arrangement structure of a dining hall demands that the service area should be designed in such a way that customers are not affected by other operations being undertaken in the organization. They should consider changing their old ways of cooking guarantee comfort to their clients. The cashier on the other hand should also be relocated to a better place to make her enjoy her job. Recommendations According to the results from the consultant, retention and recruitment has been a challenge constantly facing Peppercorn Dinning. The consultant added that the labor market was not favorable, thus making it almost impossible to get competent employees. During the job advertisement, the consultant alluded that they consider an outsider who can come in with new ways of doing business. They proposed that Peppercorn should consider undertaking audits to help management highlight on weak points. Strategic plans should be put in place. In this regard, the mission and organizational objectives should be reviewed to change old way of doing business to the modern ways. In hanging this, new customers will be attracted and new targets will be achieved thus taking the organization to the next level. It will also help management account for all work done by its employees. On organizational structure, students without any working experience should not be allowed to hold any managerial position in the organization. Experienced workers will know whom to report their grievances to and who is in charge of what. The management should introduce a fixed period of time that an employee can work. In order to compile the data, a two pages summary sheet be created in order to score the interviews and observations of each respondent. Each interviews and observations will then be accorded a unique code of identification to be in line with the scoring sheet. This is done to enable easy matching in case of the occurrence of discrepancy. The scoring sheet will essentially reduce each research interviews and observations into four categorical scores. Each interviews and observations will be scored, and carefully checked to eliminate problems of accuracy. It will also be determined that the most conspicuous readable from concerning the raw data would essentially be a categorical mean for each interviews and observations. In order to display the raw data, charts will come in handy. A cover letter should be given together with the contact information. Interviews will be handed to staff personally in envelopes to protect their identities and information they provide. The rest of the staff will be coded with either a code number or letter code to assist when identifying various groups during data collection process.
