Introduction
The canned tuna fish is a processed food, which is made by tuna fish. This food is prepared with few spices along with main material i.e. tuna fish and packaged in a can made of tin. Canned tuna fish is more popular as a processed food product on a global context. The canned tuna fish is one of the most popular as a seafood product and is considered to possess high nutrition value. In this regard, a research on the works of different researchers has been made for having knowledge about canned tuna fish.
Annotated Bibliography
1. Mahalakshmi, M. & et. al., 2012. Characteristic Levels of Heavy Metals in Canned Tuna Fish. Journal of Toxicology and Environmental Health Sciences, Vol. 4, No.2, pp. 43-45.
Canned tuna fish is recognized as one of the commercial foods, which has the utmost selling popularity
Canned tuna is one of the more popular packaged foods, so the tuna fish is also considered as a commercially important fish. It has been further
The metal concentration within the container of the canned tuna fish has become an important matter of discussion
The container where tuna fish are packed in cans has been stored includes aluminium, lead, mercury and cadmium
The optical emission of lead and several metallic products from the container of the canned tuna fish is considerably toxic
Accordingly, the toxic elements in the canned fish should not be over the legal limits
2. Sun, J. & et. al., 2013. Influence of Heating Temperature on the Development of Volatile Compounds in Bigeye Tuna Meat (Thunnus Obesus) As Assessed By E-Nose and SPME-GC/MS. International Food Research Journal, Vol.20, No.6, pp. 3077-3083.
The canned tuna fish is one of the most popular sea food in United States of America
Several food processors use the electronic nose as well as e-nose and gas chromatography and the mass spectrometer for exploring the relationship between composition of volatile compounds and different procession temperature
The light tuna fish in water contain comparatively lower rate of mercury than the canned tuna fish
The mercury level in canned tuna fish should be lying within the level of 1000ppb, which is standard by the FDI
3. Khansari, F. E. & et. al., 2005. Heavy Metals Content of Canned Tuna Fish. Food Chemistry93, pp. 293–296.
The level of the toxic elimination in the processed foods products are increasing day-by-day
It has been ascertained that the elimination of the toxic from heavy metal is one of the most important reasons for contamination
The increasing mercury level and arsenic in the canned tuna fish indicates that heavy metal containers
The metal containers of the canned fish are containing certain toxic amount, which is harmful for consumption
In addition, dumping of the containers of the canned tuna fish is considered to be one of the major reasons of marine pollution
The researcher has selected 21 cans as a sample for examining the pollution level due to canned tuna fish
4. Zarei, M. & et. al., 2010. Histamine and Heavy Metals Content of Canned Tuna Fish. Global Veterinaria, Vol.5, No. 5, pp. 259-263.
The canned tuna fish is one of the most common and popular fishes or food products in Iran
It has been observed that Iran has frequently having the canned tuna fish as well as also exported it
It is also evaluated that the canned tuna fish is one of the great predators in containing a high level of free ‘histidine in its mussels’
It is also stated that histidine that has been stored in the tuna fish muscles is converted into histamine with the help of bacteria reaction
Metals in the containers of the canned tuna fish affect the fish by making the bacterial assimilation for the conversion of histadine into histamine
The examination has proved that average consumption of the histamine in the canned tuna fish is lower than the standard limits of the FDA
5. Zarei, M. & et. al., 2011. Biogenic Amines Content of Canned Tuna Fish Marketed in Iran. American-Eurasian Journal of Toxicological Sciences, Vol.3, No.3, pp. 190-193.
Tuna fish is one of the popular food products of Iran. Tuna fish is also famous as a commercial fish of the Iran
Histamine is recognized to be one of the major chemicals that has been affecting the seafood products
Several quality control programs needed to be implemented over the production of the canned tuna fish
It has been recommended that the contaminated fish is needed to be replaced from the canned tuna fish
6. Er, B. & et. al., 2014. Determination of Histamine Levels in Canned Tuna Fish. Bulgarian Journal of Agricultural Science, Vol. 20, No. 4, pp. 834-838.
The biogenic amines in the food products are an indication of the chemical reaction in the food due to microbial action
This chemical reaction is also specifying about the spoiling condition of the foods
To prevent the spoilage due to the chemical reaction, a continuers monitoring of the foods are highly required
There are approximately 80 canned tuna fish used as sample
A lower level of histamine represents the good quality foods where, a higher level of histamine represents a lower quality of food
Microbiological examination is important for having relevant information in relation to the presence of bacteria and moisture
7. Khaniki, G. R. J. & et. al., 2005. Mercury Contamination in Fish and Public Health Aspects: A Review. Pakistan Journal of Nutrition, Vol. 4, No. 5, pp. 276-281.
Mercury is a heavy metal that has been consumed by the sea animals
It is also expected that the consumption of the sea food can lead to the intake of the chemicals
Sea food is considered to be one of the primary sources of mercury exposures
The canned tuna fish highly influences mercury secession leading to Minamata disease
Several food producing companies should be more concerned regarding controlling methyl mercury in the fish during the process
8. González-Estecha, M. & et. al., 2013. Mercury in Canned Tuna in Spain. Is Light Tuna Really Light? Food and Nutrition Sciences, Vol. 4, pp. 48-54.
The Spanish people are containing a high level of mercury in their blood due to the consumption of the canned tuna fish
Many researchers are debating about the consumption of the canned tuna fish
Few researchers examined that the canned tuna fish contains higher level of methyl mercury (MeHg)
36 cans are used as a sample for the analysis. In this regard, several researchers have taken the initiative to evaluate the ingredient, packaging as well as the price of the canned tuna fish
Both white tuna and light tuna are similarly packaged, but mercury level in white and light tuna varies. It has been observed that the regulation over High Blood Mercury (Hg) is strict, but it needs more strictness
Conclusion
After reviewing the study, it has been identified that the canned tuna fish is having both positive as well as negative implications. Specifically, it has been noted that metal level and additive chemicals in canned tuna fish, which are depriving the quality of the same. By reviewing the study, canned tuna fish is identified to be producing histamine when being connected with metal such as methyl and arsenic. Many heavy metals are also present in the containers, which can spoil the food quality and its nutrition value.
