The latest of these ‘creations’ are my chicken quesadillas. I had wanted to prepare the dish for my friend’s birthday. Since it was my first time to make it, I did not want to take any chances by winging the ingredients. However, my budget was limited. So, I had no choice but to replace some expensive ingredients while still trying to stick as close as possible to the original recipe. Like every other firsts, my first try at quesadilla was marked with confusion and mistakes. It did not help that I decided to try out the recipe on the actual day of the party.

The mistakes happened right at the very beginning. When I cooked the pita bread, I forgot to spread butter on one side of it. I remembered to do so seconds after I had laid it on the pan. The butter was supposed to add taste to the bread and make it crisp since the bread did not really need to be cooked. So, I had a crisp but tasteless piece of pita bread. When it was time to put in the filling, I realized I still had to make the filling. Since I just needed to make the outer part of bread crisp, the filling should have been ready.

I immediately turned off the stove so the bread would not be burnt. Looking around, I realized I had not taken out anything to cook the chicken filling in. By this time I was already a little worried. I still had to dress up and go over to my friend’s house early enough to help her prepare for her party. I started moving fast. I hunted around and discovered another skillet. After rinsing it off, I tossed in some chopped onions, garlic and bell peppers. When the bell peppers were soft enough, I added the shredded chicken breast.

Unfortunately, the skillet was not big enough to hold all of it so I removed half of the onion-garlic-bell pepper mix, set it aside and then added as much shredded meat in as possible. Then, I put in some seasoning. While doing this, I kept my eye on the bread, thinking that if I delayed with the filling, it might become crisp and burn when I heat it again. When the chicken filling was ready, I gratefully set it aside and proceeded to ‘construct’ my first quesadilla. I put the now lukewarm pita bread on the pan again.

This time, I spread butter on its sides first. I remember thinking that I hoped it would still add taste to the bread. Next, I spread on some chicken filling on half of the bread. After adding the filling, I reached for the grated cheese. Confused at seeing nothing, I walked back to the refrigerator to see the whole block of cheese I had bought for the quesadillas still unopened. I shook my head and quickly lowered the flame on the stove. As fast as I could, I opened the box, removed the foil wrapping from the cheese and started grating just enough cheese for the quesadilla in the pan.

I sprinkled some on top of the chicken filling and tried to fold the other half of the bread onto it. Of course, since the side was crisp, the bread broke. Shaking my head in disgust, I pressed on the quesadilla, promising to do better with the next one. When I saw the cheese drizzle over to the side of the bread, I turned off the stove and proudly took my first chicken quesadilla out of the pan and onto a plate. Next came the moment of truth since I did leave out some ingredients due to budget constraints.

I decide to call out for my cousin who had spent the night at our house. My cousin is a very picky person when it comes to food. He either likes the food or hates it.
