"Evolution of Dietary Antioxidants" is a great example of a paper on food and nutrition. Excess generation of nitrogen species and reactive oxygen in the body, and their attack on proteins, and fatty acids have been cited as major causes of diseases such as heart disease, cancer, and intricate diabetes mellitus.  Vitamins and other antioxidants materials assist to contain control and remove free radical materials from the body. Antioxidants are utilized in the removal of superoxide radicals from the body. Numerous antioxidant nutrients assist to dispose of superoxide radicals incorporating vitamin c and the three minerals (manganese, zinc, and copper) that work as cofactors for enzymes concerned in oxidant defense (Benzie, 2003). The vitamins found in the body's blood offer electrons to decrease the superoxide radical materials and form hydrogen peroxide. It is also significant to note that vitamin c and other water-soluble minerals such as thiols and uric acid defends the body against hydroxyl radicals. The following foods are rich in antioxidants materials which when consumed are very important to the body (Benzie, 2003). They include
  1. fruits such as cherries, and strawberries
  2. cereals such as corn and barley
  • seeds and nuts such as pecans and peanuts
  1. dry fruits such as apricots
  2. legumes such as beans which are rich in genistein
  3. vegetables such as spinach and cabbage

The presence of vitamin E and C in the body helps it to block the creation of risky free radicals during workouts or exercise and in the end; the body fails to develop sensitivity to insulin. A person can gain Vitamin E and C in fruits such as oranges and mangos.
