This literary review will highlight the diversity of fungi.
Fungi are a diverse kingdom. It has many uses and proves to be useful to the human race. We tend to believe that fungi are pathogenic organisms that cause diseases and rot food. On the contrary, they are crucial organisms that are beneficial to the humans at many levels. Fungi are part of the ecosystem. Fungi are important in the making of biological insecticides, in the farming industry, in the food industry and also in pharmaceutical companies. The use of fungi in food manufacturing is important and useful to humans. The fungi such as mushrooms are present in nature and are prominent in the human diet.
Fungi have the ability to secrete proteins. Enzymes secreted by fungi are used in the food industry. Filamentous fungi and yeasts are used as hosts that secrete enzymes for food processing. Enzymes such as alpha-amylase are present in Aspergillus niger. This enzyme helps in the preparation of starch syrup and dextrose. Cellulose is also produced by Aspergillus niger, and it is used for brewing and baking. Aspergillus niger also produces catalase, an enzyme which is responsible for preserving color, texture, flavor, taste and aroma of frozen food (Samson et al, 2007).
Fungal proteins are used largely in the food industry. Fungal enzymes are also used to make food more edible. This is possible by the addition or modification of components such as vitamins, colors and flavors. Food products that are made from fungi are produced on large scale by industries. Edible mushrooms are manufactured in large numbers. Over the past few years, fungal foods such as mushrooms have gained popularity among the masses. Hence fungi are useful to humans in the food industry too.
There are various kinds of fungi present in the ecosystem. They differ mainly by their mode of reproduction. There are ascomycetes which are usually called sac fungi which reproduce by spores and they include yeast. Basidiomycetes or club fungi include their spores in structures shaped like clubs and mushrooms are the main component of this class.
