Throughout the 1960s, there were highlighted other features of celiac disease. Its hereditary character was discovered in 1965 (Losowsky).
Celiac disease occurs due to negative reaction of the body to gliadin – a prolamin protein that found in gluten of wheat (Lundin). These proteins were also discovered in plants that belong to the Triticeae tribe. Moreover, this tribe also includes other cereal crops such as barley and rye. Under the influence of gliadin, in particular of three prolamine peptides, transglutaminase enzyme alters the protein, in response to this the immune system cross-react with small intestine tissues. Accordingly, the immune system causes an inflammatory reaction, which result in damage to the villi of the small intestine (called villous atrophy). This prevents the absorption of nutrients, because the intestinal villi lose their ability to absorb essential nutrients.
Celiac disease leads to increased risk of adenocarcinoma (cancer of the small intestine) and lymphoma of the small intestine (enteropathy-associated T-cell lymphoma EATL). This risk may be reduced with the application of an appropriate diet. In patients in the later stages, without proper treatment there are other complications, such as ulcerative inflammation of the small intestine (the formation of ulcers in the small intestine) and narrowing due to scarring through the obstruction of the small intestine.
Genetics. The vast majority of patients with celiac disease have one of two types of HLA-DQ. This gene is part of the major histocompatibility complex class II antigen-presenting receptor, which is another name for the human leukocyte antigen. Genes of this system are responsible for the distinction between own and other ...Download file to see next pagesRead More
